Authentic Chicken Chettinadu


AROMATIC SPECIAL CHETTINADU CHICKEN

''Chicken Chettinadu'' is a spicy and flavorful South Indian chicken curry that originates from the Chettinad region of Tamil Nadu. This dish is known for its unique blend of aromatic spices and herbs that give it a distinct taste and aroma. In this blog, we'll be sharing a delicious Chicken Chettinadu recipe that you can easily prepare at home.

Ingredients:

      • 1 kg chicken (cut into medium pieces)
      • 2 onions (finely chopped)
      • 3 tomatoes (finely chopped)
      • 1 tbsp ginger-garlic paste
      • 2 tbsp vegetable oil
      • 2 tbsp coriander leaves (finely chopped)
      • 1 tbsp mustard seeds
      • 1 tbsp cumin seeds
      • 2 tbsp fennel seeds
      • 1 tbsp black pepper
      • 1 tbsp turmeric powder
      • 2 tbsp red chili powder

For the Chettinadu Masala:

      • 2 tbsp coriander seeds
      • 1 tbsp cumin seeds
      • 1 tbsp fennel seeds
      • 1 tbsp black pepper
      • 2-3 cinnamon sticks
      • 4-5 cloves
      • 4-5 cardamom pods
      • 1 tsp poppy seeds
      • 1 tsp mustard seeds
      • 1 tsp fenugreek seeds
      • 1 tsp turmeric powder
      • 2 tbsp grated coconut
      • 1 tbsp vegetable oil
      • 1 tsp garam masala
      • 1 tsp salt

                          Instructions:

                          1. To prepare the Chettinadu masala, dry roast the coriander seeds, cumin seeds, fennel seeds, black pepper, cinnamon sticks, cloves, and cardamom pods in a pan until they become fragrant. Let them cool and grind them into a fine powder using a spice grinder.
                          2. In the same pan, heat 1 tbsp of oil and add the poppy seeds, mustard seeds, fenugreek seeds, and grated coconut. Roast them until the coconut turns golden brown. Let the mixture cool and grind it into a fine paste.
                          3. Heat 2 tbsp of vegetable oil in a pan and add the mustard seeds, cumin seeds, and fennel seeds. When they start to splutter, add the chopped onions and fry until they turn golden brown.
                          4. Add the ginger-garlic paste and fry for another minute. Add the chopped tomatoes and cook until they turn mushy.
                          5. Add the ground Chettinadu masala, red chili powder, turmeric powder, and salt. Mix well and fry for 2-3 minutes.
                          6. Add the chicken pieces and mix well until the masala coats the chicken pieces. Cover and cook for 10-15 minutes or until the chicken is cooked through.
                          7. Finally, add the garam masala and coriander leaves. Mix well and turn off the heat.

                          Serve hot with steamed rice, roti, or naan.

                          Tips:

                                   You can adjust the spiciness of the dish according to your taste by increasing or decreasing the amount of red chili powder used. If you don't have access to fresh coconut, you can use desiccated coconut instead. Make sure to use a heavy-bottomed pan to avoid burning the spices. For a healthier option, you can use boneless chicken instead of bone-in chicken.

                          This dish tastes even better the next day as the flavors intensify.
